Energy Balls


  • 100 g walnuts
  • 160 g dates (de-cored)
  • 250 g grated carrots
  • 150 g rolled oats
  • 1 /2 TSP cinnamon
  • a pinch of sea salt
  • For the topping
  • Desiccated coconut


  1. Chop up the walnuts and dates with a hand blender.
  2. Add the carrots, rolled oats, cinnamon and salt and mix together into a dough.
  3. Shape into single “energy balls”. Then roll in a bowl of desiccated coconut.
