
Energy Balls
Ingredients
- 100 g walnuts
- 160 g dates (de-cored)
- 250 g grated carrots
- 150 g rolled oats
- 1 /2 TSP cinnamon
- a pinch of sea salt
- For the topping
- Desiccated coconut
Method
- Chop up the walnuts and dates with a hand blender.
- Add the carrots, rolled oats, cinnamon and salt and mix together into a dough.
- Shape into single “energy balls”. Then roll in a bowl of desiccated coconut.
